I usually get up very early, and I am definitely not one of those that just doesn't feel hungry in the morning! The second my eyes open I'm ready for breakfast! So come around 9ish in the morning, I need a little snack to carry me over until lunch time. This is a super fresh, nutritious and tasty snack that provides energy, antioxidants and heart healthy fat. The combo of these fruits to me is just perfect! I enjoy it as is, but you could even throw this on mixed greens, add some quinoa and drizzle with balsamic vinaigrette to have at lunch!
Here's how you do it:
-Dice one small apple into bite size pieces, add to bowl
-Cut an avocado in half, save one half for later and dice the other into small bite sized pieces, add to bowl
-Rinse 1/2 to 1 cup fresh blueberries, add to bowl
-Drizzle the juice of 1/2 fresh lemon over the fruit mixture
-Sprinkle with a little ground ginger
Mix until evenly coated with lemon and ginger, and enjoy! Delicious, clean and refreshing*
