This one is for you Amy! Never going back to store bought almond milk again, this was so easy and there is no comparison in the taste. I have been telling myself for so long that I'm going to try making homemade almond milk, last night was finally the night! Now I'm wishing I had done this so much sooner. I use almond milk all the time, the only semi-downside to homemade is that it wont last very long..maybe just a few days, but I made a smaller batch just for me and I should be able to use it all up. Store bought is not bad at all, but there are ingredients added to make it last. Making homemade, literally the only ingredients are raw organic almonds and purified water.
Get yourself some cheesecloth (I got some at Clark's Nutrition) and 2 cups of almonds (I used raw, organic). Soak the almonds in water, I just let them soak over night in the fridge.
Drain the almonds and place them in a blender. Add about 2 1/2 cups of purified water to the blender, and whip it up! After blended, place the cheesecloth over a big container and pour the almond mix over the cheesecloth. Wrap up the cheesecloth nice and tight, then begin to squeeze the milk out of the cheesecloth. Be sure to get as much out of your almonds as you can (this is so fun!)
Throw out the leftover almond pulp, and whisk in a little vanilla extract and liquid stevia to the milk. Notice how thick and creamy it is?! YUM! Pour the milk into a big jar and keep in the fridge for up to 3 days.
