Cookies- For Breakfast!

Breakfast is for sure my most favorite meal! I wake up in the morning and head right to the kitchen, usually making a big green smoothie, and on mornings when I know I will be more active, also having one of these! Grab and Go breakfasts are also great to have around if you're like my husband and have to run out the door very early to get your work day started.

As fun as it is to have a cookie for breakfast, I really don't encourage typical store bought breakfast treats. Most are filled with nonsense ingredients like corn syrup, partially hydrogenated vegetable oil, powdered milk, maltose, and other artificial flavors and colors. These things have no business in your body as you start your day! (or ever for that matter..) By making your own cookies...you know they are filled with nutrition, you control the quality of ingredients and you can even make them organic. The recipe for my breakfast cookies are even gluten free and vegan. Mix in your favorite granola and try adding fun things like shredded coconut, dark chocolate chips, walnuts, whatever you want!
I had a few bags of gluten free buckwheat granola that I picked up the other day at Sprouts. (You can use any kind of granola you'd like...try to get it low sugar) I had time before I needed to be at the Studio for classes this morning, so I thought I would make a batch of breakfast cookies to share with my Inspired ladies. As requested by my ladies, here's my recipe:
 
-In a large bowl, mash one ripe banana
-To your mashed banana, add 1/4 cup natural peanut butter, 1/2 tsp vanilla extract and 3 Tbsp. pure maple syrup or honey
-To the wet mix, add 1/4 cup rolled oats (I used gluten free), 3/4 cup almond flour, and 2 Tbsp ground flaxseed, 1/4 tsp salt and 1/4 to 1/2 tsp cinnamon
-Stir until combined (don't over mix!) Then stir in 1 cup of granola. The granola I used had dried cherries in it. I suggest using a granola with dried fruit or you can add 1/4 to 1/2 cup dried fruit of your choice.
-Using a big ice cream scoop, make 6 big cookies on a baking sheet lined with parchment paper. Bake for 20 minutes in an oven set to 350 degrees. Let cool for a few minutes then transfer to a cooling rack.
Enjoy with a good cup of coffee!
Would also be great paired with yogurt and fresh fruit
