Just one of those nights where I'm craving something sweet, also a little crunchy, but could use some extra protein. I got it all in one bowl! Satisfied those cravings and still provided my body with healthy nutrients...rather then eating a big bowl of ice cream and feeling ick afterwards. I made this smoothie extra thick so the consistency would be perfect in a bowl rather then drinking up with a straw, then I throw in fresh fruit and my favorite granola...Yum! I had my delish little smoothie bowl as a later night snack, but this would also be great for breakfast! Try it out using your favorite fruits and some yummy granola, so SO good!
This is what I did:
In a high speed blender, pour in 6 oz. almond milk (or other milk of your choice). Place one frozen banana cut into smaller pieces into the blender, along with one frozen packet of unsweetened acai puree. Add one serving of vanilla vegan protein powder, a dash of cinnamon and 1 tsp vanilla extract. Optional: add one Tbsp natural almond or preanut butter. Blend on high to combine, if it is way too thick you can add a little more milk, if it is a little too runny you can add a few ice cubes.
Pour the thick smoothie into a big bowl, top with 1/2 cup granola, fresh blueberries and a little shredded coconut!
