Hit the Spot* Superfood Salad

This salad would be great for dinner, maybe even with more greens...but I put it all together for lunch this afternoon and it was AMAZING! It really did hit the spot. Talk about a big bowl of healthy nutrition! Filled with superfoods like quinoa, kale and sweet potatoes...all coated with a delicious lemon tahini sauce, my afternoon was set! Try it out for yourself for a meal that will fill you up and you can feel great about eating every last bite!
 
-Steam kale, broccoli, cauliflower, asparagus, zucchini-as much as your little heart desires. Place your steamed veggies in a bowl and add a pinch of sea salt or your favorite natural seasoning and set aside
-Cut up 1/2 baked sweet potato (at the beginning of the week I always bake a few sweet potatoes to have ready for the week!) Add to the bowl of veggies 
-Place a handful of mix greens into a large bowl and add 1/2 cup cooked quinoa
-In a small bowl: mix 1-2 Tbsp tahini, juice AND zest of 1/2 lemon, 1 garlic clove(grated) and 1/4 cup low sodium vegetable broth
-Add the steamed veggies on top of your salad mix then drizzle the lemon tahini dressing evenly over the whole salad. Mix well and dig in!
